Just as I expected last night’s Pineapple Chicken was fabulous. I was just to tired to post it after dinner, that and we had a lot of DVD watching to do!
Tonight we had pizza on the brain! We had gotten a Trader Joe’s garlic crust a long time ago and it has been sitting in the freezer jut waiting for us to make it. I got to use some more of my new fancy kitchen tools in the process.
Loved this! It made transferring part of the cut up veggies to the pan so easy. This will come in handy for sure!
This was also the first time we used our baking stone, I loved that too! The crust came out crisp yet chewy and I was a major fan!
On the pie:
- Ground turkey breast seasoned with red pepper and northwoods fire spice
- onion
- red pepper
- cheese
I was going to add olives, but forgot them in the rush to get things ready. Oh well, next time there shall be mushrooms and olives:)
Kevin’s brother Trevor got me this for Christmas and it is the perfect kitchen gadget! Our pizza cutter was in sore shape, but now that I have this baby the pizza cutter is gone for good. If you have one of these be super careful it is sharp!
I usually post my running results on Sundays as Sunday it traditionally a three mile run day. Ever since my run on Friday my knee and the ligament that connects the foot to the base of the leg have been SORE! I have iced, I have warmed, I have even popped a pill. I am super frustrated because what my mind wants my body is coming up short. To make it easier on myself I did a mile in the pool today (or what we think to be a mile). It consisted of “running”, walking, squatting, and reverse “running” forty times down and back. It took a long time, around 45 minutes, to do a mile. However, the body seemed to respond well and all that resistance was a killer workout.
We will see how the body feels later in the week. Fingers crossed it will be better!

I am getting super frustrated because I can only run for about four minutes until I have to stop with terrible pain in my right shin.
That is one thing we didn’t get for the wedding, a pizza stone!! That pizza looks delicious.
Sorry that the shin is bothering you! That is so frustrating! Keep with it and take it slow.
