When the alarm went off at 5:30 this morning let me say that I was not thinking happy thoughts! It is cold outside and I was warm in bed. I got up anyways. I hit the shower and then stumbled down the stairs to enjoy Cinnamon Almond Macaroon coffee from HOB. Along side the tasty coffee I had a Carb Check cinnamon raisin bagel with Naturally More Peanut Butter and some blackberry jam. If I am going to be up and that wicked hour at least I can enjoy a good breakfast right? The worst part of the morning is the fact that even though I am up the sun is not even thinking about making an appearance for several hours. It was a sad, cold drive to work. The temperature was -12F. That is right, I think that Nebraska is comparable to Antarctica. I now can cross that cold desolate continent of my wish of stepping on all twelve. I already know what it feels like:)
For lunch I had leftover sloppy joe’s. Pretty good! Sorry no photo as I do not think the people in the lunchroom where I work would ever understand the whole food blogging thing. I did enjoy my favorite PopChips though, Salt and Pepper! Such a good flavor! Black pepper is such a different flavor for chips, but I have to say there is not a better choice:)
I was a bit worried about having enough energy to work out post work day, but it was all mental. I pulled up to a very hopping gym. Anyone else who regularly attends a gym throughout the year hate January? I know the gym will be back to “normal” once the the overzealous people return to their unhealthy ways. It is sad to put it in such honest terms, but I always remind myself why put forth effort into your health, appearance, or fitness if it not something that you plan on making a reality for the rest of your life? Sure I would like 6 pack abs (who doesn’t?) but am I willing to put forth the effort for the rest of my life to maintain them? We all know the answer to that one is a big NO! So I suppose I hope that the majority of the people who I saw at the gym continue to go, continue to make healthful choices for them and the ones they love. If not, just get off my darn treadmill will ya?
On tonight’s dinner menu: Chili because it is just too cold for anything else!
I prepped it last night so that it would be ready when I got home from the gym.
- 1 c of chili topped with a few Tb of yogurt
- Corn VitaTop
- 1/2 honeycrisp apple
- raw veggies
Such a great dinner and easy too! That is the best part of a crockpot meal! Fill it, set it, forget it!
Today was the first day I used one of my most wanted Christmas gifts! Let me share!
I always take nuts, veggies, and whatever else suits my fancy to work for snack time. I hated the idea of using plastic bags that were only a one time use, to remedy that I used plastic containers. However there are a lot of times that the container did not even need to be washed and so I went in search of a container/bag that would better suit my needs. Guess what, I found it with Plum Creek! This set has three bags and they are a great size. I put my sandwich thin into the large bag and my almonds in the small. Super easy and they can be washed and reused a multitude of times! Love them and the fact they are a better solution to what I was currently doing! Plus they are super cute!

I love those Bear Creek soup bags. They’re really tasty and super quick to make (although, i ‘ve never made them in the crockpot)
We need to swap crock pot recipes, I usually have a pekish partner when I get off work, and I don’t like to make dinner right away, so a crockpot dinner that’s somewhat healthy every now and again would be great!
Also, Whole Foods classes? We still gonna do that, cuz i’m game if you are!
