Yesterday we were supposed to head back to Lincoln for a wedding rehearsal followed by dinner.  Good plan…except the interstate was closed.  It just keeps snowing here with no end in sight.  Blowing, snowing, and going a bit stir crazy staying inside the house.  With extra time on my hands and no real plan in sight I decided to organize the kitchen.  All counters were reorganized, the pantry got moved around a bit, and everything was cleaned top to bottom.  I also needed to mix up a new batch of oatmeal.

5lb of Quaker's old fashioned oats

Then:

Added 1.5lb of Steel Cut Oats

Then:

Last ingredient-1lb of oat bran

Then give it all a good mix!

Then I just divide it and put it into storage containers

This oat explosion will last a good several months.  It is just easier for me to buy it in bulk and mix it up than to do it each time I want to make a bowl:)

With all of the extra time we had yesterday we worked on a candy themed puzzle, organized some of the Christmas supplies, and worked on our cards to be mailed out.  When we could not take being at home any more we ventured out into the tundra and made a quick trip to Target.  The roads were not too bad in our area thankfully!

For dinner we just a had a quick and easy meal.

  • Cup of Progresso soup
  • Turkey sandwich on a thin, topped with banana peppers and lots of lettuce
  • PopChips!

Then after working on the puzzle for a few hours Kevin really wanted to try this RAW recipe for banana ice cream.  Well that and the fact that he wanted to try out the new food processor:)  The recipe worked great and we had a yummy and healthy banana ice cream to share!

For this yummy treat we used:

  • 3 frozen bananas
  • 1Tb Trader Joe’s Valencia and flax peanut butter
  • Topped the treat with a Chocolate flavored VitaTop

This had to be about one of the best things ever.  I am already thinking about different things to try!

This morning we got up late and had breakfast and read the newspaper.

  • Carb Check bagel with Naturally More PB and apricot spread
  • Yogurt with flax and Fiber One
  • Cara Cara orange
  • Coffee!

We will see what the rest of the day holds.  We plan to go to the wedding later this afternoon, but we will have to see what the weather is like!  Hope you all enjoy your Sunday!
