Finally Friday!

Friday took way too long to arrive this week.  To be honest I have been feeling really unmotivated all week, I think that I am getting sick.  My nose has been running like crazy and the weather has turned cold.  In fact I don’t think we will see much above 30 for the next week or so.  Remember me saying that I was going to do another 5K this coming Sunday?  I have been asking myself what exactly was I thinking when I thought I would run a 5k the first week in November?  It is going to be so freezing, we shall see how it goes.  I have worked out doing some type of exercise 5 days this week, but I am still feeling really unprepared for this whole run!  EEK!  Positive thinking right???

I started the morning off with some overnight oats:

onoat-roughly 1/2c of Oikos (really it was just what was left on the sides and the bottom of the container)

-1/2 c oat blend

-1/2 c pumpkin

-Cinnamon!

-Soaked overnight

-Topped with some cranberry sauce

-Also some fiber one made its way on top

I love oatmeal, it just starts the day off right!

For dinner I wanted something easy and I love a good crock pot meal, especially since it was cooking while I was out shopping all afternoon!

I just threw the following in the pot and set on low for a few hours:

-2 cans black beans

-1 package frozen grilled peppers

-1 diced onion

-cumin

-red pepper

-chili powder

-garlic flakes

When Kevin got home from work we had a Mexican inspired black bean potato!

beanpotatoI had a sweet potato topped with 1/2 cup of the bean pot mixture.  I then threw a sprinkle of cheddar cheese, salsa, and some Oikos yogurt on top.  It was so good and so filling that I only ate half and am saving the other half for some other time this weekend.

I know we are on the no grocery challenge, but when I was at Target today to get some veggies/fruits I succumbed to temptation!  I bought a frozen turkey.  They must be trying to get rid of them and I was able to buy an 11lb turkey for less than 6 bucks.  So, yes I broke the rules and purchased a grocery item, but I reasoned it out by thinking of how many meals I can get out of a turkey.  Plus I felt pretty good because we were using those frozen peppers that I am sure have been in the freezer for a year or so.  I am digging into the dredges of the freezer that is for sure!  It will be interesting to see how this last leg of the challenge goes as we are all out of tuna, kashi oatmeal, and a few other staples around here.  Dinner and lunches will become interesting that will be for sure!
