The no eating out, no eating prepacked dinners, no grocery challenge is going smashingly well! We are working on eating foods that we have to prepare and not having to go to the grocery store on a Friday makes my day off seem a bit longer. So what have we been eating?

Chicken Salad on Wasa Crackers
-Can of chicken
-1/2 c pomegranate seeds
-handful of green grapes
-1/2 apple chopped up
-2 stalks of celery
-1/2 c Oikos yogurt
-sprinkle of curry powder
-1 Tb brown mustard
So easy, refreshing, and has a great crunch!
Kevin has been having:

Banana Nut Muffins for breakfast!
On Friday night I thought since we had extra time we could make a nicer sit down dinner. It started with this:

A Kabocha squash
Which looks like this inside with the guts scraped out:

So Kevin roasted a kabocha and an acorn squash in the oven with a little olive oil spray and some curry powder on top to get this:

We also used an old Rachel Ray recipe and converted it to use fresh fruit instead of juice to make this:

Cranberry pomegranate chicken
-2 red onions
-arils from 1 large pomegranate
-1 c fresh cranberries
-1 lb chicken cut up
-1/2 tb cinnamon
-1 tb crushed garlic
-1 on the go Crystal Light cran/pom drink mix
-served over brown rice

All in all a perfect Friday night!
After our dinner at home we went to see Cirque Dreams Illumination. That was our first Cirque show and we both loved it! Making dinner at home and then seeing a live production show is a fantastic way to spend a night!
I have to say that I like the current monthly challenge. It takes just a bit more time and a bit more thought, but the meals we have had as of late have been really good. Also, making a big pot of soup and having that on hand or in the freezer makes meal time a breeze. The only downside, if you can call it that, is when I am out running errands and can not go home before going to work. If you see someone eating lunch in their car from a pre-packed cooler, that is just me abiding by the rules of the challenge!
