I told myself yesterday since we are on a new challenge this month that I need to also get back on to the workout campaign. I woke up before my alarm, but I also woke up super tight and sore. (Work was a headache last night) But, I said no excuses! I had whipped up some overnight oats to start the day. We are on day 2 of the challenge and thus far it is a success!

It tastes a million times better than it looks:)
After letting breakfast settle I went to the gym and ran on the treadmill. My goal was 3 miles, but at about the 2 mile mark I knew it wasn’t in me today. I walked another .5 and then stretched really good!
I came home to get working on this:

I have a pot of veggie soup simmering, rice in the back, and on the front left black beans and rice cooking away! I want to make sure we have options (ie, no frozen meals)

Veggie Soup
-1.5 cartons chicken stock
-carrots
-celery
-asparagus
-onions
-tri color peppers
-brown lentils
-2 cans chopped tomatoes
-Tuscan sunset spice
-red pepper
Needless to say the fridge is packed to the gills full of yummy tupperware dinners!

Lunch for the day
-My last persimmon
-bowl of the veggie soup
-Turkey sandwich on sandwich thin with roasted asparagus
There is a chill in the air, I hope fall sticks around longer! Hope you all have a good Monday! I can’t believe next week is Thanksgiving!
