Yeah for Friday!

First full week back at work almost under my belt!  Can’t say work is more fun than vacation, but you have to do something to earn a living right?

Remember how I said I was making a new curry recipe yesterday?

The recipe was from the current issue of Cooking Light.  Overall, the taste was good.  I love sweet potatoes in pretty much any form!  The cons were that it takes a long time to make.  As per the recipe it has to simmer around 1.5 hours.  The plus is that once you get it going you can pretty much walk away from it.  I would make it again just do some more modifications the next go round.

Because I had to be out of the house by 8 this morning I made some overnight oats.

Pumpkin overnight oats

Pumpkin overnight oats

-1/c cup Fage yogurt

-1/2 c water

-lots of cinnamon

-1/2 c pumpkin

-packet of Kashi oatmeal

-1/3 my oat blend

Mixed it all in a bowl and let it sit in the fridge overnight.  The taste was amazing, like a cold pumpkin pie!  YUM!  Just sprinkled a bit of Kashi go lean on the top.  It was such a great low stress way to start the day!

Have you heard the news that pumpkin is in short supply this season?  I may have an idea of how that could be possible….

In my defense Walgreens of all places had them on sale this week, so Kevin and I each bought three cans. I do put pumpkin in just about everything:)  As for the PB, well I just live on that stuff.
