Home Stretch

It is Monday again and let me just say the week is off to a pretty good start.  I thought that work last night might not be that great as one guy is on vacation, but it ended up better than expected.  Yeah!  Plus, the Amazing Race started.  That is quite possibly my favorite show!  I love to see all of the places the contestants get to travel to.

Look what I made over the weekend.

moussakaThis is the other recipe I wanted to try from this month’s Rachel Ray magazine.  Wish I could post it here, but can’t.  They really did have quite a few good recipes this month, so treat yourself to the magazine.

I will give you an ingredient run down:

-1lb ground turkey

-garlic

-onion

-eggplant

-zucchini

-cottage cheese

-crushed tomatoes

-gruyere cheese

Really good, and with 8 pieces there were lots of leftovers.  It was even better the second time around!

Today I got up had some Naturally More PB on a Sandwich thin and told myself this would be my last run before my Komen 5k this weekend.  Unfortunately it is super windy outside even though it looks gorgeous.  So, I ran at the gym.  Still great, just not the same.

Two great things~

-I ran the 5k in 35 minutes, 2 minutes faster than my best time.  The last .5 mile I really stepped it up because quite frankly I wanted to be done and was not stopping till I hit the 5K mark.

-I had a new running mix that Kevin made me last night.  It is always fun to run to new music.  Thanks Kev!

And quite possibly the best thing about running this morning was this:

refuelA bowl of chopped up banana, strawberries, yogurt, and fiber one twigs.  On the side I had a grande tazo vanilla rooibos with soy latte.  This could be my new favorite!  I got it without the simple syrup.  Well at least that is how I ordered it, I kind of wondered though because it tastes really sweet.  That might just be the soy though.  Either way after running this morning I am not too worried about a little syrup, it is just the principle of the thing.
