Summer is officially over:)

Day four of four on the long weekend is coming to an end.  It has been such a great weekend, very relaxing!  I am glad this will be a short work week as well.  That makes the task of going back to work a little more bearable.

I got up this morning and had some coffee and pumpkin oatmeal.  I then went to the gym for a yoga class.  It was really a workout today.  I was sweating like crazy, I don’t know what the difference was, but it was much needed.  When we got home I made cupcakes as I need to take some treats to work this week.  I love Halloween and thus I decorated them with a Halloween theme.

For lunch we made some grilled burgers.  We used these Amy’s Organic burgers.

amyburgerThese had a great texture to them and a great flavor as well.  I think these are my favorite by far.  I think it is the brown rice that makes them so good.

-Organic Rice burger

-Served on a sandwich thin

-Roasted red pepper spread

-Jalapeno Jack cheese slice

-Grilled onion slices

-Lettuce

-Fresh Tomato

On the side we had kale chips.  We were a bit leery about trying these, but in all honestly they were really great.  They reminded me a bit of roasted brussel sprouts.  They were really good dipped in ketchup.  Overall it was a perfect end of summer lunch!

For dinner I just made the ever quick Cuban beans and rice.

-1 c Cuban beans

-dollop of plain yogurt

-smothered in salsa
