Long Weekend=Great Times

Rounding out day three of four of a four day weekend.  Loving every minute of this long weekend.  It has been really nice to enjoy time off without lots of plans or items to cross off a list.  If you know me you know that I live off lists.  I love to make a list and then cross things off.  It is part of the OCD that I am ever constantly battling.  The only bad part of the weekend has been my allergies.  I have been feeling really under the weather with no energy, scratchy eyes, and a sour stomach.

Yesterday I got up, ate breakfast, laid in the chair, watched some tv, then took a nap.  I told you I have not been feeling the best!  That is so unlike me!  I finally got up some gumption and we had lunch.

lunchWe had Morningstar Farms Chick’n patty, carrots, tomatoes, pickles, blue ginger chips, and a pear.  It was great, but too much.  Some of the fruit and veggies went back to the fridge.    After lunch we went out and about to do some shopping.  I am in the market for some spinning shoes and so we went to Scheel’s to try some on.  I found some, I just don’t want to drop too much money on a pair of shoes that would only be used for a few classes a week.  I am really interested in how different the class would be with the proper shoes.

After we were done shopping we went to Old Chicago for dinner.  I have been in the mood for nachos for a long time.  I finally gave in to the craving.  Which is two fold.  They were good, not as good as I had imagined them, but good none the less.  The bad part of having them is the guilt that I felt after eating them.  I am working really hard on detaching myself and my feelings about food.  I was only like 300 calories for the day, so it is not the end of the world, but it is hard for me to get my brain to stop obsessing.  We went for a nice long walk when we got home and that helps my brain.

Today I woke up late and we made these pancakes.

protein pancakesI followed the recipe, but I used soy protein instead of rice.  I topped them with my favorite, Naturally More pb! I also added cinnamon into the “batter.”   I am not an egg eater, but these were good.  A lot of protein set the day off straight.

I made this dessert to take over to my mom’s for dinner/game night.

applecrispBig surprise another apple themed dessert:)  That is what you get when you give me a bucket full of apples and the love of fall!  It was really great topped with just a bit of vanilla ice cream.  I loved the top “crust”  How many ways can I say I love oatmeal?  Yum!

I want to say thank you to all of the kind words, comments, and emails as of late.  I really appreciate the thoughts and wisdom coming from each and every one of you.  Each time I doubt myself it is nice to hear from someone that I motivate them.  It is a reciprocal relationship for sure as you all motivate me as well!  Thanks again!

  1. I am a total to-do list girl myself. In fact, I’ll put really easy things on my list like make bed just so I can cross something off. My husband always laughs at me, but at least the bed gets made. ;)

    Nachos – I love them too. Tortilla chips are one of my favorite things in the whole world. Don’t beat yourself up for eating them. You’d been craving them a long time and you’d hardly eaten all day. No worries.

    So glad you liked the protein pancakes. A bit rubbery, but always good topped with a little PB. :)

    PS – I love taking naps post-breakfast naps. They’re rare in my life, but oh how I love them!
