Figgy Friday

Today was day one of a four day weekend.  It was great!  I went and weighed in this morning at WW and was down 2 lb.  Yeah!  That is what I get when I eat a clean diet, stay on plan, and work out like I am supposed to.  So close to my goal that I have set for myself before our vacation.  I have no doubt that it is attainable.  I will have to be extra careful this weekend because when I get off my regular routine I tend to get off my eating routine just as easy.  After WW I went to Starbucks and had another cinnamon dolce latte to go with my strawberries and pb and banana sammy.  Yum, perfect breakfast combo.  Since Kevin had the day off as well we just ran a whole bunch of errands.  Nothing that exciting, just here and there.  For lunch we went to Whole Foods and I had a great salad.  I should really take a picture of one of my WF Salads sometime.

As the weather was gorgeous today we took Molly to the dog park t wear her out.  She is sleeping next to me right now so we got exactly what we wanted out of that trip:)

Later tonight we walked over to the bike rack so I could look at shoes for spinning.  I did not find anything too exciting, least of all something that was within my price range.  I want to try spinning class without just wearing my regular shoes.  I suppose it will take some more looking before I decide if I actually need them.

For dinner I made curry chicken.  I am not going to post a photo, because you all have seen it before.  But, for dessert I made some roasted figs over ice cream.

figgyI just washed the figs and then sliced them in half.  I put them in a shallow dish and topped them with a little bit of agave nectar and some cinnamon.  I cooked them in the oven for 15 minutes at 375.  When they were done and still hot I put them over ice cream.  The result….amazing!  It melted the ice cream right away and I had this great fig soup almost.  I have never had figs before, well if you do not count the Newton variety, but would eat them again.  The seeds are a bit weird at first, but overall the flavor was great.  I thing a fig jam or preserve would be good to try as well.

Hope everyone is having a great weekend!
