8.2 then we were done!

Tonight Kevin and I rode bikes together for the first time this season.  It was a perfect night out not too hot and the breeze cooled you down.  Jason was kind enough to find Kevin a spare wheel and he is on the ever constant Craigslist search for a better bike for either of us.  Anyways, we rode to Target, went around Standing Bear Lake, and then headed for home.  On mile 8.2 just as we were going to start to climb the last hill Kevin’s chain slipped, tire moved, and Kevin hit the ground.  It was kind of a horrible ending to such a beautiful ride!  He was not able to get the bike wheel back in place and thus he had to walk the bike back home:(  Good thing we were getting close!

For dinner we had red beans and rice.  I found the recipe in the newspaper a few weeks ago and I adapted it to suit our tastes and to use what we had in the cupboard.

  • Italian sausages cut up into bite size pieces (recipe called for andouillie, but we did not have those on hand)
  • can of tomatoes with jalapenos
  • can of chopped chilies
  • green pepper
  • onion
  • bay leaf
  • salt and pepper
  • Cajun seasoning
  • 2 cloves of garlic
  • can of red beans drained

You pretty much just saute all the veggies together, throw in the sausage and beans and let it cook for roughly 45 minutes while you make some rice.  We had ours over brown rice.

This was really good!  It would have been even better if we had some spicy sausages!

Is it bad to say that this is actually better?  At least it does not hurt anymore!

Two more days this week!  I am ready!

    Wow, I’m just amazed at how your arm looks! I had no idea something like that could happen. I’m glad it’s not hurting anymore.

    Dinner looks really good!! We’ve started counting calories to be more aware of what we’re eating and wow, what a difference it’s made. It’s definitely put what I eat into a new perspective and although it’s a hassle at times, it’s well worth the effort.
