I was going to post last night and say that we had a wonderful picnic dinner at the park. We followed dinner up by going to an informational meeting about traveling to China. I can’t wait to go to China! It is a ways out and we do not have actual plans, just a wish list made. Anyways….the centrifuge went down last night and I had to go in and see what I could do. Unfortunately, I could not get it going as there was a circuit problem. We did however get it up and running and as I type this right now it is still going! Just something like 18 hours before it will be done:) I also get the pleasure of going in tomorrow on my day off to finish this run. How I love my job:)
Last night was a perfect night to enjoy a turkey sammy, lemon vitaminwater and some baked doritos. I wish the weather could be like that every day!
Tonight after work I took an hour nap! Sleep never felt so good! I could have slept the rest of the night away but I am glad that Kevin got me up. We took a 2 mile round trip walk down to PetCo/Office Depot for some things. Molly loves to go to PetCo because everyone thinks she is super cute and want to give her loads of attention. She thinks that she is a princess!
When we got home we started on dinner. I could not find the red beef curry recipe that I have made before so I just winged it and made it with chicken to the best of my memory.
- 3 chicken breasts
- 2 red peppers
- 1 green pepper
- 1/2 Tb. of red curry paste
- 2 cloves of garlic
- 2 Serrano peppers
- 1 can of lite coconut milk
I served it over bulgar wheat and topped with sesame seeds. It was really good, but it was really spicy!
I am looking forward to enjoying the weekend, it is off to a good start:)
