First day under my belt. All in all not too shabby. Not the best, but certainly not close to the worst. Fingers crossed that the rest of the week continues like this.
I have to share what I had for lunch. If you are someone who likes veggie meals or just like lasagna you have to try this:
I took this for lunch along with some broccoli. I really liked the flavor of the sauce and cheese! It also had the right amount of veggies including carrots on top. I am a big fan and would buy this one again for sure. The $1 off coupon I had to begin with did tempt me this time around.
When I got off work it was sunny and around 48 degrees. It was a beautiful day! To maximize our enjoyment of the weather we went for a 4.2 mile walk around the lake. I got to use the Garmin and it was sure fun to see how far we went. We took Molly along for fun and she got a long walk in for sure. I think it is safe to say that she walked at least a mile more than we did just due to the walking back and forth sniffing everything! She is relaxing now and will soon be asleep. We have to get her back in shape for walking season!
We were all pretty tired when we got home. Kevin and I contemplated having sammy’s for dinner, but decided that since we had planned to make stir fry that we needed to just go ahead and do it. With both of us chopping and prepping it really did not take all that long.
In the stir fry there was:
- 3 chicken breasts
- red peppers
- bermuda onions
- yellow onions
- celery
- carrots
The sauce was made up of:
- Chinese 5 spice
- Bangkok blend spice
- red curry
- red pepper
- black pepper
- soy sauce
- chicken broth
If I had to make this again I couldn’t because I just kept adding spices as I tasted it to make it hotter or more flavorful. The best part is that we have four servings left over for the week!
I had mine over bulgar wheat topped with a few peanuts and some sesame seeds.
All in all it was a good day and an even better night. Hope you all enjoyed Sunday!
