Dinner Club:Chinese

Last night we had our monthly dinner club get together. This month’s hosts were Matt and Elyse (which by the way have the cutest house ever).  We all arrived with a big appetite and our side dishes.

Elyse started the night with a great appetizer in any cuisine:

Kale Chips

I love how crunch kale gets.  I think that I ate about a million of these:)

Jason brought a special twist on potato salad:

Asian Potato Salad

I usually avoid potato salad like the plague as I don’t like eggs.  However, I was all about the Asian variety.  It had a good combination of crunch from the water chestnuts and soft from the potatoes.  The sauce was a little sweet.  Overall one of my favorites of the night!

Elyse made two main entrees:

Szechuan Beef

Chicken with Bok Choy and Broccoli

Finally here it is all put together, I took the Jasmine rice and Lettuce Wraps:

YUM!

  • Asian potato salad
  • Lettuce wrap
  • More kale chips
  • Chicken with bok choy and rice

As if the night could not get any better there was dessert.  Oh yes we had Asian desserts:)

I would like a repeat of this right now!

  • Green Tea sorbet brought by Ben and Jeremy
  • Homemade fortune cookies
  • Adzuki Bean Cake

Jason knows how to make a mean bean cake!  I know it sounds kind of weird, but I had two small pieces and was really wanting another.  That is just how good it was!  It was kind of sponge like on the outside, but the middle (which was my favorite) was kind of doughy still.  So Good!

And on to my fortune:

I don't know about you, but I sure don't wear my best pants to do dirty work in!

I had to cut the evening short because I got called into work.  It was unexpected.  I sure did not think that I would be working all through the night.  I climbed into bed this morning at the time my alarm usually goes off.  EEEK!  Then I got about 4 hours of sleep and went back in for another four.  No rest for the weary.  I am hoping that this will all pay off in the end……

Sunday night is usually the night Kevin and I work out together.  As I was exhausted and feeling kind of naseous after work we skipped the workout.  Instead we made dinner.

Salad

And:

Pizza!

  • Whole wheat crust from Trader Joe’s
  • Tomato sauce
  • Ground turkey
  • Onions
  • Portabello mushroom
  • Green, Yellow, and Orange Peppers
  • Mozzerella cheese

This was a great pie!  Plus, I have leftovers for later this week as I only ate 1/4 of the pizza leaving me two slices to dream about!
