Bowled Over

Everything I ate today pretty much came from a bowl!

The day started with PB&J oats and a coffee/hot chocolate combo

  • 1/3 cup oat mix
  • 1 Tb flaxmeal
  • 1 1/4 cup of water
  • cinnamon

Mix this like crazy in a pot on the stove.  When all of the water is absorbed and the oats are cooked you then add:

  • 1/2 cup pumpkin
  • 1/4 cup egg whites

Keep on stirring!  All the ingredients will incorporate is you keep stirring and the egg white will be unnoticeable.

On the top:

  • 1 Tb Naturally More Peanut Butter
  • Some blackberry Jam

Friday is usually my long running day, but the whole knee thing has made that a bit hard.  Today I went to the gym and did 4.25 miles on the adaptive motion trainer.  It was a good workout and after my 50 minutes were up I was more than ready to be done!

Lunch:

  • Turkey Sausage Chili (found in the freezer from the last batch we made)
  • Veggie Blend-carrots, zucchini, and green beans
  • grapefruit

Can you name this vegetable?

If you guessed parsnips you are correct!  I can’t say that I have ever had a parsnip until tonight.  When we bought these last week the checker told us they were horrible and she remembers having to eat them in her childhood.  We were both a bit scared, but the fear was unfounded.  We actually liked the parsnips!

African Peanut Chicken over bulgar wheat

This was another crockpot dinner and hands down one of the best ones we have ever made!

Into the pot went-

  • carrots
  • parsnips
  • can of crushed tomatoes
  • chicken
  • cinnamon
  • cumin
  • the secret ingredient-peanut butter!
  • hot sauce

I just let it cook on high for four hours and we enjoyed every bite!  The sauce that the tomatoes and peanut butter reduce to is out of this world good!  I am not quite sure why this is called “African” but I think that it has something to do with the veggie and peanut butter combo.  I made a soup once that was very much like this.
